Home Cook: Peggy Leinenkugel

As the wife of brewer Jake Leinenkugel, Peggy cooks with beer "a couple of times a week." Peggy and Jake Leinenkugel love to grill with the family brew

That may sound like a lot of beer, but when it runs in the family, it's easy to do.

"We grill out often during the summer, and it's so simple to add beer to marinades and bastes," says Peggy.

"From just basting on beer straight from the bottle, to stirring it into a sauce, we love the flavor of Leinie's."

Peggy grew up in Chippewa Falls, and when she started dating Jake, his family always had grilled chicken on the weekend. "Jake's dad would bathe the chicken in beer while he was grilling it.

"Why does your dad do that?" Peggy asked Jake. "Partly to settle down the coals, also add to the flavor of the chicken," he answered.

Now, everybody gets to cook and sample cooking with beer in the Leinenkugel kitchen. Here's a fast marinade for grilled chicken.

Skin the chicken, rub it with several peeled and halves garlic cloves, dust with a teaspoon of crushed rosemary, put in baking dish, cover with Leinie's Red or Creamy Dark and marinate for several hours. Grill the chicken over glowing coals (Not too hot, or the skinless chicken will lose its juiciness). Turn and rotate twice during cooking to create attractive cross hatch of grill marks. Estimated cooking time - 20 to 30 minutes, depending on thickness of chicken pieces (less for boneless and skinless breasts).
